This healthy homemade pudding recipe is great as breakfast, snack or dessert. It’s loaded with fiber, good fats and antioxidants. You can dress it up the same way you would oatmeal for breakfast – top it with chopped nuts, fresh or dried fruit and seeds. You could also add some dark chocolate chips to make this a decadent dessert. I love recipes like this that can transform from one meal to the next and I hope you enjoy it, too!

Coco Banana Chia Pudding Recipe

  • 2 bananas
  • 2-3 Tbsp date syrup or maple syrup (or 3 pitted dates)
  • 1 can full-fat coconut milk
  • 1 tsp cinnamon
  • 2 tsp cacao powder
  • 1 tsp pure vanilla extract
  • 1/4 cup chia seeds
  • 1/4 cup water (if needed to thin it out a bit)

Add the first 6 ingredients to a blender and blend until smooth. Add the chia seeds and water (if needed) to the blender and do a quick pulse to incorporate the chia seeds. Store in an air-tight glass container in the fridge to allow the ingredients to thicken at least an hour or overnight. Serve alone or topped with fruit, nuts, and seeds – get creative! Enjoy 🙂
