This is a festive green drink the whole family can enjoy! It’s creamy and has just the right amount of sweetness. Be sure to 2 or 3x the ingredients to share with your loved ones ๐Ÿ™‚ 

Simple Shamrock Smoothie

Ingredients:

  • 2 handfuls of baby spinach
  • 1/2 avocado
  • 1/2 banana 
  • 1 scoop vanilla plant protein 
  • 1 cup unsweetened almond milk (add more or less depending on the consistency you want)

Blend and enjoy!

Chopped Kale Salad with Creamy Peanut Dressing

 
Ingredients:
  • 1โ„2 cup natural peanut butter
  • 1โ„4 cup water
  • Juice of 1 lemon
  • 1/2 tablespoon tamari or soy sauce
  • 1 clove garlic, minced
  • 2 tablespoons olive oil
  • 1 bunch of kale, stemmed and chopped
  • 1 medium sized cucumber, peeled and chopped
  • 1 avocado, chopped
  • 1 tomato, chopped
  • 15 ounce can chickpeas, drained and rinsed
  • 2 tablespoons pumpkin seeds (optional)

1. In a large bowl, whisk together the tahini, water, tamari, lemon juice, garlic, olive oil, and sea salt and pepper to taste.

2. Add the kale, cucumber, avocado, tomato, chickpeas, and pumpkin seeds. 

3. Toss with the dressing until combined and serve.

Raw Vegan Grasshopper Bars

Grasshopper Bars!! These are AMAZING and easy and I could eat them every day.. I adapted a recipe and am going to double it tomorrow so it makes more. Avocado coconut and peppermint go together so well and I really love how healthy this is, still tastes light and doesn’t use any nuts, a nice change for a raw treat  

Grasshopper Bars

MINT INGREDIENTS

  • 1 Avocado
  • 1/4 c. Maple Syrup
  • 6 T. coconut oil, melted
  • 1 1/2 c. shredded unsweetened coconut
  • A drop or two of food-grade peppermint essential oil Pinch of rock/Himalayan salt

CHOCOLATE INGREDIENTS

  • 1/4 c. coconut oil
  • 2 T. Maple syrup
  • 1/4 c. Raw cocoa powder
  • 1/4 t. vanilla extract 

Instructions:

  1. Blend mint layer ingredients together and Smooth mixture into prepared dish and stick in the freezer ~ I suggest you line dish with baking paper
  2. Mix together chocolate layer and Pour over chilled bottom layer and return to the freezer for about 15 minutes, or until the chocolate layer is hardened.
  3. Slice and enjoy!
