This refreshing mocktail is great for picnics, lounging on the beach or just sitting on your back porch.

 

The combination of mint and lime is cooling and it makes for a colorful, unique drink with a healthy punch of pomegranate juice. Plus, it’s a guilt-free indulgence compared to the traditional mojito. A standard mojito from a restaurant contains 200 calories – and that’s without the addition of any other fruit juices.

 

My version is healthier, alcohol-free (so all Mama’s can enjoy it anytime) and has less than 60 calories per serving!

 

That’s my kind of cocktail! The best part is you can enjoy it whether you’re pregnant, breastfeeding or neither. Oh, yeah, and the kiddos can enjoy it, too! So, when the kids ask for some you won’t have to tell them it’s a grown-up drink they can’t have.. well, if you want to share that is 😉

Virgin Pomegranate Mojito

Serves 2

Ingredients

  • 16oz sparkling water
  • Juice of 2 limes & one spent lime hull, quartered
  • 2 large sprigs of fresh mint leaves
  • 6oz unsweetened pomegranate juice
  • 2-3 packets stevia or 8-10 drops plain liquid stevia
  • Ice

Method

In a mixing glass gently mull together the mint leaves and stevia. Add to a pitcher with remaining ingredients and top off with crushed ice. Stir till combined, pour & enjoy!

Garnish your glass with fresh mint leaves, a slice of lime and pomegranate arils.

Of course, you can always add some Bacardi Silver Rum (1-2 ounces per serving) for a true “grown-up” drink 🙂
